ServSafe Food Handler vs ServSafe Manager: Which Do You Need?

ServSafe offers two credentials that people often confuse. Picking the wrong one wastes time and money, so here is how they differ.
ServSafe Food Handler
This is the entry-level credential for staff who prepare, serve, or handle food: line cooks, servers, baristas, and food truck crew. Many states and counties require a food handler card within a set number of days of hire. The assessment is 40 questions and covers five areas: basic food safety, personal hygiene, cross-contamination and allergens, time and temperature, and cleaning and sanitation.
Requirements vary by state, and in some places a ServSafe card alone does not satisfy the local rule. The ServSafe Food Handler Study Guide includes a state-by-state requirements table, three full 40-question practice exams, and every temperature and time figure on one page.
ServSafe Manager
This is the certification for supervisors, kitchen managers, and the person in charge of a shift. Health codes in many jurisdictions require at least one certified food protection manager per establishment. The exam is 90 questions, proctored, with a 70 percent passing score, and it goes deeper into the flow of food, HACCP, facilities, and management responsibilities.

Which one should you get?
If you handle food and are not in charge of a shift, you need the Food Handler card. If you supervise, manage, or will be the person in charge, you need Manager certification, and it generally satisfies food handler requirements too. When in doubt, check with your local health department before you register.
The numbers to memorize for both
The temperature danger zone is 41 F to 135 F. Poultry cooks to 165 F, ground meat to 155 F, and whole cuts of beef, pork, and seafood to 145 F. Cooked food cools from 135 F to 70 F within two hours and to 41 F within a total of six. These figures appear on both exams in multiple forms, so drill them until they are automatic.
